Vegan S’mores Cups

You don't have to wait until your next camping trip to make these delicious Vegan S'mores Cups by @purelykaylie. Our Granola + Coconut MacroBars replace graham crackers as the base and we can't get enough!
Yield: 6 servings
Ingredients
- 6 Granola + Coconut MacroBars, halved
- 3/4 cup Vegan Chocolate Chips
- 1/2 cup Full-Fat Coconut Milk, canned
- 30 Mini Vegan Marshmallows, or 6 large
Directions
1. Slice the Granola + Coconut MacroBars in half. Add two halves to each slot in a silicone muffin pan (or a muffin tin with parchment paper liners). Press the bars into the pan, forming a cup with a well in the center. Set aside.
2. Add coconut milk to a bowl. Microwave for 45 seconds. Add chocolate chips to the bowl. Let sit for 1-2 minutes, then whisk to combine.
3. Pour chocolate into the center of each cup. Chill in the refrigerator for 5-10 minutes to set (optional).
4. After, top each cup with 5 mini vegan marshmallows (or 1 large marshmallow). Using a kitchen torch, toast the marshmallows until golden brown. If desired, drizzle melted chocolate over top. Enjoy!
