Ingredients

  • 3/4 cup Banana, mashed
  • 2 tbsp Ground Flaxseed
  • 1 tbsp Coconut Sugar
  • 1 tbsp Coconut Oil, melted
  • 1 tbsp Lemon Juice
  • 2 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • 1 cup Almond Milk, room temp
  • 2 1/2 cups Oat Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Almond Butter, syrup
  • 1/4 cup Maple Syrup, syrup
  • 3 tbsp Coconut Oil, melted, syrup
  • 1 Banana + Almond Butter MacroBar, chopped, topping
  • 1 Banana, sliced, topping

Directions

1. Add mashed banana, ground flaxseed, coconut sugar, melted coconut oil, lemon juice, vanilla extract, ground cinnamon, and almond milk to a bowl. Whisk together until evenly combined.
2. Add oat flour, baking powder, baking soda, and salt to the bowl. Mix together until the flour is evenly incorporated. Do not over-mix.
3. Warm a skillet or frying pan over medium-low heat. Using a ¼ measuring cup, pour the batter onto the pan and form round pancakes. Cook for 2-3 minutes or until bubbles begin to form on the surface, then flip to cook the other side.
4. Meanwhile, prepare the almond butter syrup. Add the almond butter, maple syrup, and melted coconut oil to a bowl. Mix together until smooth.
5. Serve pancakes with a chopped Banana + Almond Butter MacroBar, sliced banana, and almond butter syrup. Enjoy!
