If you've hit your banana bread limit and want to mix it up in the kitchen, then we recommend's flavorful and vegan version of the classic pumpkin bread recipe!

Yield: 12 servings


  • 2 tbsp Flaxseed Meal, flax egg
  • 5 tbsp Water, flax egg
  • 2 cups 1-to-1 Gluten-Free Baking Flour
  • 1 1/2 tsp Cinnamon
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 15 oz can Pumpkin Puree
  • 2/3 cup Maple Syrup
  • 1/4 cup Almond Milk
  • 1 tsp Vanilla Extract
  • 1/4 cup Applesauce
  • Pumpkin Seeds, topping


1. Preheat the oven to 325F & line a loaf pan with parchment paper.
2. In a small bowl, mix your flaxseed with the water and let it sit for 5 minutes.
3. In a separate bowl, mix your dry ingredients together.
4. In another bowl, first mix the apple sauce and maple syrup. Next, stir in the remaining wet ingredients.
5. Mix the wet and dry ingredients together until just combined. Be careful not to over stir.
6. Add the batter to the loaf pan, sprinkle with your toppings and bake for 20 minutes.
7. Remove and tent the pan. Return to the oven for 50 minutes.
8. Let cool.
