Vegan Chickpea Salad

Yield: 5 servings
- 1 15 ounce can Chickpeas, rinsed and patted dry
- 1/2 tbsp Lemon Juice
- 1/2 tsp Dijon Mustard
- 1 tbsp Vegan Mayonnaise
- 1 Celery Stalk, chopped
- 1/4 Red Onion, diced
- Salt, to taste
- Black Pepper, to taste
- Paprika, to taste
1. In a large glass bowl, mash chickpeas until they’ve reached your desired consistency using the back of a fork or a large, slotted spoon.
2. Mix in lemon juice, mustard, mayonnaise until dispersed throughout the mix and add in celery, onion.
3. Chill for 30 minutes before serving, top with salt, pepper, and paprika to taste.
