We can't get enough of the new Mint Chocolate Chip MacroBar which is our fresh take on a classic flavor combo. So needless to say we're excited to share this delicious Mint Chocolate Chip sandwich recipe with you.

Yield: 12 servings


  • 1/4 cup Vegan Butter, room temp
  • 1 cup + 1 tbsp Powdered Sugar
  • Kosher salt, pinch
  • 1 - 2 tbsp Dairy-free Milk, your choice
  • 1/4 tsp Peppermint Extract
  • 8 Mint Chocolate Chip MacroBars, cut into thirds
  • 4 oz Bittersweet Chocolate, roughly chopped


1. In a medium bowl, cream together the vegan butter and powdered sugar until fully combined. Add in the salt, dairy free milk, and peppermint extract, and continue mixing on low speed until smooth. Transfer the filling to a piping bag with a small piping tip.
2. Pair the MacroBar pieces together, then pipe the peppermint filling onto the bottom half and gently press the paired piece on top.
3. Once all of the sandwiches are assembled, place them on a parchment lined baking sheet and freeze for about 10-15 minutes.
4. Meanwhile, add the chopped chocolate to a small heat proof bowl, and place over a pot of simmering water. Stir frequently until fully melted. Remove from heat.
5. Dip the sandwiches in the melted chocolate and place back on the baking sheet to set. Enjoy!
