Harry S. Truman said: "No nation is healthier than its children or more prosperous than its farmers." If he is right then our nation is at risk. The Centers for Disease Control estimates that of US children born in the year 2000, one out of three will develop diabetes in their lifetime. Something needs to be done. The good news is that we do have people and organizations that are creating change in our schools.



The Renegade Lunch Lady, Chef Ann Cooper is the outspoken proponent of healthy school lunches.

I grew up on a farm in England and my parents owned a bakery. Their best seller was a cheesecake. I still remember the taste and mouthfeel of that cheesecake. It was creamy and rich with a brown crust and lots of cheese.

People who eat candy live one year longer than people who never eat candy. This is an interesting statistic which I heard over the weekend. The opposite of what one would expect. It comes from a well known 1998 medical research study from the Harvard School of Public Health.

I have made vegan pancakes with varied success many times but these are by far the most successful. The secret ingredient is the "buttermilk" made with soy milk and lemon. Try them and I think you will agree.
